How to choose a restaurant?
The easiest way is to study the restaurant guide in advance. But you can navigate the place:
■ Where visitors come in droves, it is impossible to try real local food: it is noisy, expensive and multicultural. But restaurants for tourists have their own pluses - they work almost around the clock,while other institutions are subject to the whimsical flow of local life.
■ Look for restaurants that are often visited by locals - they certainly know where they feed well, tasty and in full accordance with tradition.
■ The more concise the menu, the better. No cook can masterly prepare 40-50 dishes. In many good restaurants they can specialize in just a couple of dishes, but they will be cooked perfectly.
■ The right emphasis is important. Do not be confused by external simplicity. The hostess in a decent restaurant can work in the hall in a modest casual dress, and the waiters in worn (but spotlessly clean) aprons.Street food
Street-food is another appetizing way to imbue the local spirit. You can buy seafood in Vietnam, hot dogs in New York, and fried scorpions in China. In Ghana, typical street food is fufu, cassava or banana balls flavored with pepper. In Morocco, they trade grilled corn; in Hong Kong, they use dim Sum dumplings. In Israel, they will offer falafel, chickpea cutlets with spices, in Germany - sausages. In order for a snack to become a pleasant gastronomic discovery, and not an accident, you need to pay attention to the counter - it must be clean, and the seller neatly dressed, in gloves, wielding tongs, spatulas.
Crowded is also an advantage - the products do not stale. If the seller specializes in one or two dishes, then most likely he buys fresh products every morning. The best choice is dishes that are prepared with you (fried, boiled, baked, warmed up at 70 ° C and above).

Most often, tourists pickle unwashed vegetables and leafy salads, egg dishes, raw fish, slurred sauces and drinks with crushed ice - because it is not known from which water it was frozen, bottled or collected from a tap. Potato, tuna, oysters, tomatoes and cheese are also on the list of hazardous foods compiled at the US Public Interest Research Center.
